Baker at work at Nouvé

Nouvé opened in Lexington Center in February 2024, in the small Mass Ave storefront that used to be La Dolda. It is still a tiny shop — takeout only, bakers in view, a window on the sidewalk so you can see what's left in the case.

The baking is French: lamination, butter, slow dough. The flavors often aren't: matcha cream, miso and scallion, shokupan, honey toast. That mix is the point — age-old technique with the ingredients the bakers actually want to eat.

There is no dining room and no long website menu that stays true for a month. The daily board lives on Instagram (@nouvebakery), where Lexington already follows along. This site is the other half: a place to send someone for hours, a map, a gift card, or a pre-order before the croissants are gone.
